Brownies
Ingredients

1/2 cup/75 g
all-purpose/plain flour

1/2 tsp
baking powder
-
1/8 tsp salt

6 oz/180 g
bittersweet/plain chocolate, coarsely chopped

1 1/2
cups/375 g butter, cut up
-
5 large eggs
-
2 1/4
cups/440 g firmly packed light brown sugar

1 tsp vanilla
extract/essence
Method:
-
Preheat the
oven to 325°F/170°C/gas 3. Butter and flour a 13
x 9inch (33 x 23-cm) baking pan.

Sift the
flour, baking powder, and salt into a large
bowl. Melt the chocolate and butter in a double
boiler over barely simmering water.

Remove from
the heat and let cool. Beat the eggs, brown
sugar, and vanilla in a large bowl with an
electric mixer at high speed until pale and
thick.

Use a large
rubber spatula to fold in the chocolate mixture,
followed by the dry ingredients.

Pour the
batter into the prepared pan. Bake for
35-40
minutes, or
until dry on top and almost firm to the touch.

Do not over
bake. Cool completely before cutting into
squares.
