Piquant Mocha
Cookies
Ingredients

2 cups/300 g
all-purpose/plain flour

1/2 tsp
baking powder

1/2 tsp
freshly ground black pepper

1/4 tsp salt
-
1/2 cup/90 g
raisins
-
2 tbsp coffee
liqueur
-
8 oz/250 g
bittersweet/plain chocolate, coarsely chopped

4 tbsp butter
-
2 large eggs
-
3/4 cup/150 g
granulated sugar
-
2 tsp vanilla
extract/essence

1 cup/180 g
semisweet/dark chocolate chips
Method:

Preheat the oven
to 350°F/180°C/gas 4. Butter two cookie sheets. Sift
the flour, baking powder, pepper, and salt into a
small bowl.

Heat the raisins
with the coffee liqueur in a small saucepan over low
heat.

Melt the
chocolate with the butter in a double boiler over
barely simmering water. Set aside to cool.

Beat the eggs and
sugar in a large bowl until creamy. Beat in the
melted chocolate and vanilla.

Beat in the dry
ingredients, followed by the raisin mixture and the
chocolate chips.

Drop tablespoons
of the dough 2 inches (5 cm) apart onto the prepared
cookie sheets. Bake for 10-12 minutes, or until set
but still slightly soft.

Cool until the
cookies firm slightly. Transfer to racks to finish
cooling.
