Cookie Recipes - Piquant Mocha Cookies

Ingredients

  • 2 cups/300 g all-purpose/plain flour

  • 1/2 tsp baking powder

  • 1/2 tsp freshly ground black pepper

  • 1/4 tsp salt

  • 1/2 cup/90 g raisins

  • 2 tbsp coffee liqueur

  • 8 oz/250 g bittersweet/plain chocolate, coarsely chopped

  • 4 tbsp butter

  • 2 large eggs

  • 3/4 cup/150 g granulated sugar

  • 2 tsp vanilla extract/essence

  • 1 cup/180 g semisweet/dark chocolate chips


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter two cookie sheets. Sift the flour, baking powder, pepper, and salt into a small bowl.

  2. Heat the raisins with the coffee liqueur in a small saucepan over low heat.

  3. Melt the chocolate with the butter in a double boiler over barely simmering water. Set aside to cool.

  4. Beat the eggs and sugar in a large bowl until creamy. Beat in the melted chocolate and vanilla.

  5. Beat in the dry ingredients, followed by the raisin mixture and the chocolate chips.

  6. Drop tablespoons of the dough 2 inches (5 cm) apart onto the prepared cookie sheets. Bake for 10-12 minutes, or until set but still slightly soft.

  7. Cool until the cookies firm slightly. Transfer to racks to finish cooling.
