14 oz/400 g semisweet/dark
chocolate, coarsely chopped
4 tbsp butter
1 1/2 cups/300 g granulated
sugar
1 tsp vanilla
extract/essence
4 large eggs
2 cups/200 g finely chopped
pecans + 1 cup/100 g pecan halves
1 cup/180 g semisweet/dark
chocolate chips
Method:
Preheat the
oven to 350°F/180°C/gas

Line two
cookie sheets with parchment paper.
Sift the
flour, coffee granules, baking powder, and salt
into a large bowl. Melt the chocolate and butter
in a double boiler over barely simmering water.
Stir in the
sugar until completely dissolved. Remove from
the heat and mix in the vanilla and eggs.
Mix in the
dry ingredients, finely chopped pecans, and
chocolate chips.
Drop
tablespoons of the dough 3 inches (8 cm) apart
onto the prepared cookie sheets.
Press four
pecan halves into each corner of the cookies to
resemble the legs of a turtle and an additional
one to resemble a head.
Bake for
8-10
minutes, or
until just set. Let cool completely.
