Cookie Recipes - Pecan and Chocolate Chip Wedges
Ingredients

2 cups/300 g
all-purpose/plain flour

1 tsp baking
soda

1/2 tsp salt

1/2 cup/125 g
butter, softened

1/3 cup/70 g
granulated sugar

1/2 cup/100 g
firmly packed light brown sugar

1/2 tsp
vanilla extract/essence
-
1 large egg
-
3/4 cup/125 g
semisweet/dark chocolate chips

1/2 cup/50 g
finely chopped pecans

1/2 cup/50 g

Method:

Preheat the
oven to 350°F/180°C/gas 4. Set out a 12-inch
(30-cm) pizza pan.

Sift the
flour, baking soda, and salt into a medium bowl.
Beat the butter and granulated and brown sugars
in a large bowl with an electric mixer at high
speed until creamy.

Add the
vanilla and egg, beating until just blended. Mix
in the dry ingredients, chocolate chips, pecans,
and M&Ms.

Spread the
mixture in the pan. Bake for 12-15 minutes, or
until lightly browned. Cool completely in the
pan. Cut into wedges.
