Cookie Recipes - Pecan Brownies

 

Ingredients

  • 3 cups/450 g all-purpose/plain flour

  • 2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup/125 g butter, cut up

  • 4 oz/125 g semisweet/dark chocolate, coarsely chopped

  • 2 cups/400 g granulated sugar

  • 4 large eggs, lightly beaten

  • 1 tsp vanilla extract/essence

  • 3/4 cup/125 g coarsely chopped pecans


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Line a 13 x 9-inch (33 x 23-cm) baking pan with aluminum foil, letting the edges overhang.

  2. Sift the flour, baking powder, and salt into a medium bowl. Melt the butter and chocolate in a double boiler over barely simmering water.

  3. Remove from the heat and stir in the sugar. Add the eggs, beating until just blended.

  4. Mix in the dry ingredients, vanilla, and pecans. Pour the batter into the prepared pan.

  5. Bake for 25-30 minutes, or until dry on top and almost firm to the touch. Do not over bake. Cool completely in the pan.

  6. Using the foil as handles, lift onto a cutting board. Peel off the foil. Cut into squares.
