Cookie Recipes - Over The Top Chocolate Squares

 

Ingredients

 

CREAM CHEESE MIXTURE:

  • 1 cup/250 ml cream cheese, softened

  • 1/4 cup/50 g granulated sugar

  • 2 tbsp finely grated orange zest

  • 3 tbsp orange juice

  • 1 tsp cornstarch/corn flour 

CHOCOLATE MIXTURE:

  • 7 oz/200 g semisweet/dark chocolate, coarsely chopped

  • 4 tbsp butter

  • 3/4 cup/150 g granulated sugar

  • 2 tsp vanilla extract/essence

  • 2 large eggs, lightly beaten with

  • 2 tbsp cold water

  • 1/2 cup/75 g all-purpose/plain flour


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter a 9-inch (23-cm) baking pan.

  2. Cream Cheese Mixture: Beat the cream cheese and sugar in a large bowl until creamy. Beat in the orange zest and juice and cornstarch. Add the egg.

  3. Chocolate Mixture: Melt the chocolate and butter in a double boiler over barely simmering water. Set aside to cool.

  4. Stir in the sugar and vanilla. Add the beaten egg mixture, followed by the flour. Pour the chocolate mixture into the prepared pan.

  5. Drop tablespoons of the cream cheese mixture over the chocolate base. Swirl the mixtures together to create a marbled effect.

  6. Bake for 25-30 minutes, or until slightly risen around the edges and set in the center. Cool before cutting into squares.
