Oat Squares with
Chocolate Walnut Topping
Ingredients

1/2 cup/125 g
butter, softened

2/3 cup/140 g
firmly packed light brown sugar

1 large egg
yolk
-
1/3 cup/50 g
all-purpose/plain flour
-
2 tbsp
old-fashioned rolled oats
-
1/8 tsp salt
TOPPING:
Method:

Preheat the
oven to 375°F/190°C/gas 5. Butter a 10 1/2 x 15
1/2-inch (26 x 36-cm) jellyroll pan.

Beat the
butter and brown sugar in a large bowl with an
electric mixer at high speed until creamy.

Add the egg
yolk, beating until just blended. Mix in the
flour, oats, and salt until well blended.

Firmly press
the mixture into the prepared pan to form a
smooth, even layer. Bake for 15-20 minutes, or
until just golden.

Topping: Melt
the chocolate and butter in a double boiler over
barely simmering water.

Spread the
melted chocolate mixture over the oat base and
sprinkle with the chopped walnuts. Cut into
squares.
