Cookie Recipes - Milk Chocolate Frosted Bars
Ingredients

cups/225 g all-purpose/plain flour

1 tbsp
unsweetened cocoa powder

2 tsp baking
powder

1/8 tsp salt

1 cup/250 g
butter, softened

1 cup/200 g
granulated sugar

4 large eggs,
lightly beaten
-
2 tbsp milk
-
1/2 tsp
vanilla extract/essence
FROSTING:
Method:
-
Preheat the
oven to 350°F/180°C/gas 4. Butter an 11 x 7inch
(28 x 18-cm) baking pan.

Sift the
flour, cocoa, baking powder, and salt into a
medium bowl. Beat the butter and sugar in a
large bowl with an electric mixer at high speed
until creamy.

Add the eggs,
beating until just blended. Mix in the dry
ingredients, milk, and vanilla until well
blended. Spread the mixture evenly in the
prepared pan.

Bake for
35-45
minutes, or
until firm to the touch and a toothpick inserted
into the center comes out clean. Cool completely
in the pan.

Frosting: Melt the chocolate chips and butter
with the milk in a double boiler over barely
simmering water until well blended.

Remove from the heat and beat in the
confectioners' sugar until thick and spread
able.

Spread the frosting over the cookie base. Let
stand for 30 minutes, or until set. Cut into
bars.
