Cookie Recipes - Marshmallow Rounds

 

Ingredients

  • 1/2 cup/125 g butter, cut up

  • 1 tbsp dark brown sugar

  • 1/3 cup/50 g unsweetened cocoa powder

  • 2 tbsp light corn syrup

  • 8 oz/250 g semisweet/dark chocolate, coarsely chopped

  • 2 cups/250 g snipped marshmallows, mixed colors

  • 1 cup/180 g raisins


Method:

  1. Set out an 8-inch (20-cm) square of plastic wrap. Melt the butter with the brown sugar, cocoa powder, and corn syrup in a small saucepan over low heat until the sugar has dissolved completely.

  2. Melt the chocolate in a double boiler over barely simmering water. Stir the chocolate into the butter mixture.

  3. Mix in the marshmallows and raisins. Spoon the mixture onto the center of the plastic wrap. Roll the mixture to form a cylinder.

  4. Refrigerate for 4 hours, or until firm. Cut into rounds.
