Cookie Recipes - Lunch Box Squares
Ingredients

1 cup/250 g butter, cut up

4 tbsp unsweetened cocoa
powder

1 tbsp firmly packed light
brown sugar

2 tbsp light corn
syrup/golden syrup

2 cups/250 g graham cracker
crumbs/crushed digestive biscuits

4 oz/125 g semisweet/dark
chocolate, coarsely chopped
Method:

Butter an
8-inch (20-cm) square baking pan. Melt the
butter in a small saucepan over low heat.

Stir in the
cocoa, brown sugar, and corn syrup. Bring to a
boil and let boil for 1 minute.

Remove from
the heat and stir in the crumbs. Spoon the
mixture into the prepared pan, pressing down
lightly.

Melt the
chocolate in a double boiler over barely
simmering water. Pour the melted chocolate over
the cookie base.

Use a knife
to decorate the chocolate in a decorative
manner. Refrigerate for 1 hour. Cut into
squares.
