Ingredients
BASE:

1 cup/150
g all-purpose/plain
flour
-
1 cup/125 g
shredded/desiccated coconut
-
1/4 cup/50 g granulated
sugar
-
1 tbsp unsweetened cocoa
powder
-
1/2 tsp baking powder
-
1/8 tsp salt
-
1/2 cup/125 g butter, cut
up
MINT TOPPING:
-
1 2/3 cups/250 g
confectioners'/ Icing sugar
-
1/2 tsp mint
extract/essence
-
1/2 tsp green food coloring
-
4 tbsp warm water
(105°-115°F), or more as needed
Method:

Base:
Preheat the oven to
350°F/180°C/
gas 4. Set
out a 10 1/2
x 15 1/2 inch
(26 x 36-cm) jelly-roll pan.

Stir together
the flour, coconut, sugar, cocoa, baking powder,
and salt in a large bowl.

Use a pastry
blender to cut in the butter until the mixture
resembles fine crumbs. Press the mixture evenly
into the pan.

Bake for
25-30
minutes, or
until lightly browned. Cool completely in the
pan on a rack.

Mint Topping:
Mix the confectioners' sugar, mint extract, and
green food coloring in a small bowl.

Add enough
water to make a spread able paste. Spread the
topping over the crispy base. Cut into bars.
