Ingredients

oz/90 g semisweet/dark
chocolate, coarsely chopped
1 cup/150 g
all-purpose/plain flour
2 tbsp unsweetened cocoa
powder
1 tsp espresso coffee
powder
1 tsp baking soda
1/4 tsp salt
2/3 cup/150 g butter,
softened
1/2 cup/100 g firmly packed
light brown sugar
1 large egg, lightly beaten
1 tsp vanilla
extract/essence
FROSTING:
1 1/2 cups/200 g
confectioners'/ Icing sugar
1 tsp espresso coffee
powder
1-2 tbsp warm water
Method:
Melt the
chocolate in a bowl
set over simmering water. Sift the flour,
cocoa,
espresso powder, baking soda, and salt into a
medium bowl.
Beat
the butter
and brown sugar in a large bowl with an electric
mixer at high speed until creamy. Add the egg
and vanilla and beat for 1 minute.
Stir in the
melted chocolate. Mix in the dry ingredients. Divide
the dough in half.
Form the
dough into two 9 x 2inch (23 x 5-cm) logs, wrap
in plastic wrap, and refrigerate for at least 2
hours.
Preheat
the oven to 350°F/180°C/gas
4.
Butter two
cookie sheets. Slice the dough 2/3 inch (1.5 cm)
thick and place 1 inch (2.5 cm) apart on the
prepared cookie sheets.
Bake for
12-15 minutes, or until the edges are firm and
the bottoms are lightly browned. Cool on the
sheets until the cookies firm slightly. Transfer
to racks to cool.
Frosting: Mix
the sugar and espresso powder in a small bowl.
Stir in enough warm water to make a drizzling
consistency.Drizzle over
the cookies and let
set.
