Cookie Recipes - Fancy Cookies

 

Ingredients

 

BUTTER COOKIES:

  • 1 cup/150 g all-purpose/plain flour

  • 1/8 tsp salt

  • 6 tbsp butter, softened

  • 1/4 cup/50 g granulated sugar

  • 1 large egg yolk, lightly beaten

  • 2 tbsp sour cream

  • 1/4 tsp almond extract/essence 

CHOCOLATE GLAZE:

  • 1/2 cup/100 g granulated sugar

  • 2 tbsp water

  • 1 tbsp butter

  • 2 tsp dark corn syrup/golden syrup

  • 1/4 cup/50 g semisweet/dark chocolate chips

  • colored sprinkles or sugar crystals, to decorate


Method:

  1. Butter Cookies: Preheat the oven to 375 of/ 180°C/gas 4. Set out two cookie sheets. Sift the flour and salt into a medium bowl.

  2. Beat the butter and sugar in a large bowl with an electric mixer at high speed until creamy. Add the egg yolk, beating until just blended.

  3. Beat in 5 the sour cream and almond extract. Mix in the dry ingredients to form a smooth dough.

  4. Insert a Christmas tree design plate into a cookie press by sliding it into the head and locking in place.

  5. Press out the cookies, spacing about 1/2 inch (1 cm) apart on the cookie sheets.

  6. Bake for 12-15 minutes, or until lightly browned. Cool on the sheets until the cookies firm slightly. Transfer to racks to finish cooling.

  7. Chocolate Glaze: Cook the sugar, water, butter, and corn syrup in a small saucepan over low heat until the sugar has dissolved.

  8. Remove from the heat and stir in the chocolate chips. Return the saucepan to the heat and stir until the glaze is smooth.

  9. Dip the cookies halfway into the glaze and decorate with the sprinkles. Let stand until the glaze has dried, about 30 minutes.
