Cookie Recipes - Double Chocolate
Nut Biscotti
Ingredients

cups/375 g all-purpose/plain flour

3/4 cup/125 g
unsweetened cocoa powder

2 tsp baking
powder

1/4 tsp salt

1/2 cup/125 g
butter, softened

1 1/3
cups/240 g granulated sugar

1/2 tsp
vanilla extract/essence

3 large eggs
-
1 cup/100 g
coarsely chopped walnuts

4 oz/125 g
semisweet/dark chocolate, coarsely chopped
Method:

Preheat the
oven to 325°F/170°C/gas 3. Line a cookie sheet
with parchment paper.

Sift the
flour, cocoa, baking powder, and salt into a
medium bowl. Beat the butter and sugar in a
large bowl with an electric mixer at high speed
until creamy.

Add the
vanilla and eggs, beating until just blended.
Mix in the dry ingredients, walnuts, and
chocolate to form a stiff dough.

Divide the
dough in half. Form the dough into two 12 inch
(30-cm) logs and place 3 inches (8 cm) apart on
the prepared cookie sheet, flattening the tops.

Bake for
25-35 minutes, or until firm to the touch.
Transfer to a cutting board to cool for 15
minutes. Cut on the diagonal into 1 inch
(2.5-cm) slices.

Arrange the
slices cut-side up on two cookie sheets and bake
for 10-15 minutes more. Cool on racks.
