Cookie Recipes - Double Chocolate Nut Biscotti

 

Ingredients

  • 2 1/2 cups/375 g all-purpose/plain flour

  • 3/4 cup/125 g unsweetened cocoa powder

  • 2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup/125 g butter, softened

  • 1 1/3 cups/240 g granulated sugar

  • 1/2 tsp vanilla extract/essence

  • 3 large eggs

  • 1 cup/100 g coarsely chopped walnuts

  • 4 oz/125 g semisweet/dark chocolate, coarsely chopped


Method:

  1. Preheat the oven to 325°F/170°C/gas 3. Line a cookie sheet with parchment paper.

  2. Sift the flour, cocoa, baking powder, and salt into a medium bowl. Beat the butter and sugar in a large bowl with an electric mixer at high speed until creamy.

  3. Add the vanilla and eggs, beating until just blended. Mix in the dry ingredients, walnuts, and chocolate to form a stiff dough.

  4. Divide the dough in half. Form the dough into two 12 inch (30-cm) logs and place 3 inches (8 cm) apart on the prepared cookie sheet, flattening the tops.

  5. Bake for 25-35 minutes, or until firm to the touch. Transfer to a cutting board to cool for 15 minutes. Cut on the diagonal into 1 inch (2.5-cm) slices.

  6. Arrange the slices cut-side up on two cookie sheets and bake for 10-15 minutes more. Cool on racks.
