Cookie Recipes - Crunchy Hazelnut Rounds Cookies 

 

Ingredients

  • 1/2 cup/125 g butter, softened

  • 2/3 cup/140 g firmly packed dark brown sugar

  • 1 large egg, lightly beaten

  • 2/3 cup/100 g all-purpose/plain flour

  • 1/3 cup/50 g old-fashioned rolled oats

  • 1 1/2 tbsp unsweetened cocoa powder

  • 1/2 tsp baking powder

  • 1/8 tsp salt

  • 3 oz/90 g white chocolate, coarsely chopped

  • 3 oz/90 g milk chocolate, coarsely chopped

  • 1 cup/100 g coarsely chopped hazelnuts


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter a cookie sheet.

  2. Beat the butter and brown sugar in a large bowl with an electric mixer at high speed until creamy.

  3. Add the egg, beating until just blended. Mix in the flour, oats, cocoa, baking powder, and salt.

  4. Stir in the white and milk chocolates and hazelnuts. Drop teaspoons of the mixture 1/2 inch (1 cm) apart on the prepared baking sheet.

  5. Bake for 10-15 minutes, or until risen and craggy. Cool on the sheet until the cookies firm slightly. Transfer to racks and let cool completely.
