Cocoa Corn Flake Cookies
Ingredients

3/4 cup/180
g butter, softened
-
1/2 cup/100 g granulated
sugar
-
2 cups/300 g
all-purpose/plain flour
-
2 tbsp unsweetened cocoa
powder
-
1/4 cup/50 g corn flakes,
lightly crushed
FROSTING :
-
1 cup/150 g confectioners'/
icing sugar
-
2 tbsp butter, softened
-
1 tbsp boiling water
-
1 tbsp unsweetened cocoa
powder
-
1 tsp vanilla
extract/essence
-
30 walnut halves, to
decorate
Method:
-
Preheat the
oven to 350°F/180°C/gas 4. Butter two cookie
sheets.

Beat the
butter and sugar in a large bowl with an
electric mixer at high speed until creamy.

Sift in the
flour and cocoa. Stir in the corn flakes until
well mixed. Drop teaspoons of the dough 1 inch
(2.5 cm) apart onto the prepared cookie sheets.

Bake for
10-15 minutes, or until firm to the touch.
Transfer to racks to cool.

Frosting: Mix
the confectioners' sugar, butter, water, cocoa,
and vanilla in a small bowl until well blended.
-
Spread the
frosting over the tops of the cooled cookies.
Decorate with the walnut halves.
