Cookie Recipes - Chocolate Vanilla Cookies

 

Ingredients

  • 1 1/3 cups/200 g all-purpose/plain flour

  • 1 tsp baking powder

  • 1/8 tsp salt

  • 1/2 cup/125 g butter, softened

  • 1/2 cup/100 g granulated sugar

  • 1 tsp vanilla extract/essence

  • 1 large egg yolk, lightly beaten

  • 1 oz/30 g semisweet/dark chocolate, coarsely chopped

  • 1/2 tsp almond extract/essence

  • 2/3 cup/70 g chopped walnuts


Method:

  1. Line an 8 1/2 x 4 1/2inch (21 x 11-cm) loaf pan with waxed paper. Sift the flour, baking powder, and salt into a medium bowl.

  2. Beat the butter and sugar in a large bowl until creamy. Add the vanilla, egg yolk, and dry ingredients.

  3. Divide the dough into three bowls. Melt the chocolate in a double boiler over barely simmering water.

  4. Add the almond extract to one bowl, the chocolate to the second bowl, and the walnuts to the third bowl.

  5. Spread the almond mixture in the pan, followed by the walnut mixture. Finish with the chocolate mixture. Refrigerate for 4 hours.

  6. Preheat the oven to 350°F/180°C/gas 4. Butter four cookie sheets. Cut the dough into 1/4-inch (5-mm) thick slices. 

  7. Place 1 inch (2.5 cm) apart on the sheets. Bake for 10-12 minutes, or until browned. Cool on racks.
