Cookie Recipes - Chocolate Squares

 

Ingredients

  • 4 large egg whites

  • 1 1/4 cups/250 g granulated sugar

  • 3 cups/300 g finely ground almonds

  • 2 oz/60 g bittersweet/plain chocolate, finely grated

  • 1 tsp vanilla extract/essence

  • 2 cups/500 ml Chocolate Frosting


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter a 13 x 9-inch (33 x 23-cm) baking pan.

  2. Beat 3 of the egg whites in a large bowl with an electric mixer at medium speed until soft peaks form.

  3. With mixer at high speed, gradually beat in 1 cup (200 g) of the sugar, beating until stiff, glossy peaks form.

  4. Use a large rubber spatula to fold in the almonds, chocolate, and vanilla. Spread the mixture evenly in the prepared pan.

  5. Beat the remaining egg white and remaining sugar until frothy. Brush over the top.

  6. Bake for 20-25 minutes, or until lightly browned. Cool completely in the pan. If desired, spread with the frosting.

  7. Make a swirled pattern with a fork. Cut into squares.
