Cookie Recipes - Chocolate Orange Cookies
Ingredients

1 cup/150 g
all-purpose/plain flour
-
1/8 tsp salt

6 tbsp
butter, cut up

1/3 cup/50 g
finely ground almonds
-
1/4 cup/50 g
granulated sugar

1 tbsp finely
grated orange zest
-
1 large egg
yolk, lightly beaten
-
2 tbsp fresh
orange juice

4 oz/125 g
semisweet/dark chocolate, coarsely chopped
Method:

Sift the
flour and salt into a large bowl. Cut in the
butter until the mixture resembles fine crumbs.

Mix in the
ground almonds, sugar, and orange zest. Add the
egg yolk and orange juice until smooth.
Refrigerate for 30 minutes.

Preheat the
oven to 350°F/180°C/gas 4. Line two cookie
sheets with parchment paper. Roll out the dough
to a thickness of 1/4 inch (5 mm).

Use a 2inch
(5-cm) cookie cutter to cut out the cookies.
Continue cutting out cookies until all the dough
is used.

Transfer the
cookies to the prepared cookie sheets, placing
them 1 inch (2.5 cm) apart.

Bake for
10-15 minutes, or until golden. Transfer to
racks to cool. Melt the chocolate in a double
boiler over barely simmering water.

Dip the
cookies halfway into the chocolate and let stand
for 30 minutes until
set.
