Cookie Recipes - Chocolate Mint Squares

 

Ingredients

 

BASE:

  • 2/3 cup/100 g all-purpose/plain flour

  • 2 tbsp unsweetened cocoa powder

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1/3 cup/70 g granulated sugar

  • 2 tbsp butter

  • 1 large egg, lightly beaten with

  • 6 tbsp water

FILLING:

  • 2 1/4 cups/330 g confectioners'/icing sugar

  • 1 tbsp mint liqueur

  • 1-2 tbsp milk

FROSTING:

  • 4 oz/125 g semisweet/dark chocolate, coarsely chopped

  • 6 tbsp butter


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter a 11 x 7inch (28 x 18-cm) baking pan.

  2. Base: Sift the flour, cocoa, baking powder, and salt into a large bowl. Stir in the sugar. Cut in the butter until the mixture resembles fine crumbs.

  3. Mix in the egg mixture. Firmly press the mixture into the prepared pan to form a smooth layer. Bake for 15-20 minutes, or until firm to the touch.

  4. Filling: Mix the confectioners' sugar and mint liqueur until well blended.

  5. Stir in enough milk to achieve a spread able consistency. Spread the peppermint mixture over the base.

  6. Frosting: Melt the chocolate and butter over barely simmering water. Pour the frosting over the peppermint layer.

  7. Make a swirling pattern with a fork. Let stand for 30 minutes until set. Cut into squares.
