Cookie Recipes - Chocolate-Frosted Oat Bars

 

Ingredients

  • 3/4 cup/125 g all-purpose/plain flour

  • 1/8 tsp salt

  • 1 cup/250 g butter, softened

  • 1 cup/200 g firmly packed light brown sugar

  • 2 large egg yolks

  • 3/4 cup/125 g old-fashioned rolled oats

FROSTING:

  • 6 oz/180 g semisweet/dark chocolate, coarsely chopped

  • 2 tbsp butter


Method:

  1. Preheat the oven to 375°F/190°C/gas 5. Butter an 11 x 7-inch (28 x 18-cm) baking pan.

  2. Sift the flour and salt into a medium bowl. Beat the butter and brown sugar in a large bowl with an electric mixer at high speed until creamy.

  3. Add the egg yolks, beating until just blended. Mix in the dry ingredients and oats.

  4. Firmly press the mixture into the prepared pan to form a smooth, even layer.

  5. Bake for 15-20 minutes, or until firm to the touch. Cool completely in the pan.

  6. Frosting: Melt the chocolate and butter in a double boiler over barely simmering water.

  7. Spread the chocolate mixture over and let stand for 30 minutes until set. Cut into bars.
