Almond Bites
Ingredients
Method:

Preheat the
oven to 325°F/170°C/gas 3. Line two cookie
sheets with rice paper.

Sprinkle half
the almonds on a large baking sheet. Toast for 7
minutes, or until lightly golden.

Lower the
oven temperature to 300°F/150°C/gas 2. Place the
almonds on a clean kitchen towel and rub off the
skins. Coarsely chop half the peeled
almonds.

Process the
remaining almonds in a food processor until
finely chopped. Set aside.

Beat the egg
whites in a medium bowl until frothy. Beat in
the superfine sugar, vanilla sugar, cream of
tartar, and salt.

Fold in all
the almonds and chocolate. Form domes the size
of apricots. Place 2 inches (5 cm) apart on the
prepared baking sheets.

Bake for
20-30 minutes, or until golden. Cool on the
cookie sheets.
