Cookie Recipes - Chocolate Almond Bites

 

Ingredients

  • 3/4 cup/125 g almonds

  • 2 large egg whites

  • 1/2 cup/100 g superfine/caster sugar

  • 2 tbsp vanilla sugar

  • 1/8 tsp cream of tartar

  • 1/8 tsp salt

  • 2 oz/60 g bittersweet/plain chocolate, grated


Method:

  1. Preheat the oven to 325°F/170°C/gas 3. Line two cookie sheets with rice paper.

  2. Sprinkle half the almonds on a large baking sheet. Toast for 7 minutes, or until lightly golden.

  3. Lower the oven temperature to 300°F/150°C/gas 2. Place the almonds on a clean kitchen towel and rub off the skins.  Coarsely chop half the peeled almonds.

  4. Process the remaining almonds in a food processor until finely chopped. Set aside.

  5. Beat the egg whites in a medium bowl until frothy. Beat in the superfine sugar, vanilla sugar, cream of tartar, and salt. 

  6. Fold in all the almonds and chocolate. Form domes the size of apricots. Place 2 inches (5 cm) apart on the prepared baking sheets.

  7. Bake for 20-30 minutes, or until golden. Cool on the cookie sheets.
