semisweet/dark chocolate, coarsely chopped

butter, cut up
1 1/4
cups/250 g firmly packed dark brown sugar
1 cup/100 g
coarsely chopped pecans
3 large eggs,
lightly beaten
2 firm-ripe
bananas, mashed
Method:
Preheat the
oven to 325°F/170°C/gas 3. Butter an 11 x 7-inch
(28 x 18-cm) baking pan.
Sift the
flour, cocoa, baking powder, and salt into a
medium bowl. Melt the chocolate with the butter
and brown sugar in a double boiler over barely
simmering water.
Remove from
the heat and stir in the pecans, eggs, and
bananas. Mix in the dry ingredients.
Spoon the
mixture evenly into the prepared pan. Bake for
25-35
minutes, or until dry on top and almost firm to
the touch.
Do not over bake. Cool completely before cutting
into bars.
