Cereal and Seed Cookie Recipes - Walnut Crisps Recipe
Ingredients
2/3 cup/100 g all-purpose/plain flour
1/2 tsp baking soda
1/8 tsp salt
1/2 cup/125 g butter, softened
1/4 cup/50 g granulated sugar
2/3 cup/70 g firmly packed light brown
sugar
1/2 tsp vanilla extract/essence
1 large
egg, lightly beaten
1/3 cup/50 g corn flakes
2/3
cup/70 g coarsely chopped
walnuts
Method:
Preheat the oven
to 375°F/190°C/gas 5.
Butter
three cookie sheets. Sift the
flour, baking soda, and salt into a large bowl.
Beat the butter
and granulated and brown sugars in a large bowl with
an electric mixer at high speed until creamy.
Add
the vanilla and egg, beating until just blended. Mix in the dry ingredients, followed by the corn
flakes and walnuts.
Drop
teaspoons of the dough 1 inch (2.5 cm) apart onto
the prepared cookie sheets.
Bake, one sheet
at a time, for 12-15 minutes, or until lightly
browned. Cool on the sheets
until the cookies firm slightly.Transfer to racks
to finish cooling.
