Cereal and Seed Cookie Recipes - Swiss Squares Recipe

Ingredients

  • 1/2 cup/125 g butter, softened

  • 2/3 cup/140 ml smooth peanut butter

  • 6 tbsp honey

  • 1/2 cup/50 g shredded/desiccated coconut

  • 1/2 cup/75 g muesli

  • 2 cups/300 g old-fashioned rolled oats

  • 1/8 tsp salt


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Set out 13 x 9-inch (33 x 23-cm) baking pan.

  2. Mix the butter, peanut butter, and honey in a medium saucepan over low heat until well blended.

  3. Stir in the coconut, muesli, oats, and salt. Spoon the mixture onto the baking sheet and level with a spoon.

  4. Bake for 15-20 minutes, or until just golden. Cool completely before cutting into bars.
