Cereal and Seed Cookie Recipes - Sunflower Seed Drizzlers Recipe

Ingredients

  • 2 cups/300 g all-purpose/plain flour

  • 1 tsp ground allspice

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1 1/2 cups/225 g sunflower seeds

  • 1 cup/150 g old­fashioned rolled oats

  • 2 tbsp sesame seeds

  • 1 cup/250 g butter, cut up

  • 2 tbsp firmly packed dark brown sugar

  • 1 tbsp dark molasses

  • 1 1/2 cups/250 g carob chips


Method:

  1. Preheat the oven to 375°F/190°C/gas 5. Butter two cookie sheets.

  2. Sift the flour, allspice, baking soda, and salt into a large bowl. Stir in the  sunflower seeds, oats, and sesame seeds.

  3. Melt the butter with the brown sugar and molasses in a small saucepan over low heat until the sugar has dissolved completely.

  4. Pour the melted butter mixture into the dry ingredients and mix well. Drop tablespoons of the mixture 1 1/2 inches (4 cm) apart onto the prepared cookie sheets, flattening with a fork.

  5. Bake for 8-10 minutes, or until just golden. Transfer to racks to cool. Melt the carob in a double boiler over barely simmering water.

  6. Drizzle the carob over the cookies and let stand for 30 minutes.
