Cereal and Seed Cookie Recipes - Sunflower Coconut Squares Recipe

Ingredients

  • 3/4 cup/125 g cashew nuts, shelled

  • 1 tsp vegetable or sesame oil

  • 4 cups/600 g sunflower seeds

  • 6 tbsp apple juice concentrate or maple syrup

  • 1 cup/125 g shredded/desiccated coconut

  • 1/2 tsp vanilla extract/essence

  • 1/4 tsp salt


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Oil an 11 x 7-inch (28 x 18cm) baking pan.

  2. Process the cashew nuts and oil in a food processor or blender until smooth. (If you don't have a food processor or blender, grind the nuts with a pestle and mortar.)

  3. Stir together the cashew nut mixture, sunflower seeds, apple juice, coconut, vanilla, and salt in a large bowl until well blended.

  4. Press the mixture into the prepared pan, smoothing the top. Bake for 25-30 minutes, or until golden brown. Cool completely before cutting into bars.
