Preheat the oven
to 350°F/180°C/gas 4. Line two cookie sheets with
parchment paper.

Sift the flour and salt into
a medium bowl. Beat the butter and granulated and
vanilla sugars until creamy.

Add the ground
sunflower seeds and vanilla. Mix in the dry
ingredients and milk to form a stiff dough.

Divide the dough in half. Form the dough into two
8-inch (20-cm) logs and roll in the finely chopped
sunflower seeds.

Wrap each in plastic wrap, and
refrigerate for at least 30 minutes. Slice the
dough 1/2 inch (1 cm) thick and place 1 inch (2.5
cm) apart on the prepared cookie sheets.

Bake for 10-15
minutes, or until golden and the edges are firm. Cool on the sheet until the cookies firm
slightly.

Transfer to racks and let cool
completely. Dust with the confectioners' sugar.
