Cereal and Seed Cookie Recipes - Sunflower Butter Cookies Recipe

Ingredients

  • 1 2/3 cups/250 g all-purpose/plain flour

  • 1/8 tsp salt

  • 3/4 cup/180 g butter, softened

  • 1/4 cup/50 g granulated sugar

  • 2 tbsp vanilla sugar

  • 1 cup/150 g ground sunflower seeds

  • 1/2 tsp vanilla extract/essence

  • 2 tbsp milk

  • 4 tbsp finely chopped sunflower seeds

  • 1/3 cup/50 g confectioners'/icing sugar


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Line two cookie sheets with parchment paper.

  2. Sift the flour and salt into a medium bowl. Beat the butter and granulated and vanilla sugars until creamy.

  3. Add the ground sunflower seeds and vanilla. Mix in the dry ingredients and milk to form a stiff dough.

  4. Divide the dough in half. Form the dough into two 8-inch (20-cm) logs and roll in the finely chopped sunflower seeds.

  5. Wrap each in plastic wrap, and refrigerate for at least 30 minutes. Slice the dough 1/2 inch (1 cm) thick and place 1 inch (2.5 cm) apart on the prepared cookie sheets.

  6. Bake for 10-15 minutes, or until golden and the edges are firm. Cool on the sheet until the cookies firm slightly.

  7. Transfer to racks and let cool completely. Dust with the confectioners' sugar.
