Cereal and Seed Cookie Recipes - Summertime Drops Recipe
Ingredients

cups/225 g all-purpose/plain
flour
1 tsp
baking soda
1/4 tsp
salt
1 cup/250 g
butter, softened
1 cup/200
g firmly packed light
brown sugar
1 cup/200
g granulated sugar
2 large
eggs, lightly beaten
1/2 tsp vanilla extract/essence
2 cups/300 g old-fashioned rolled oats
1 cup/100 g sunflower seeds
Method:
Preheat the oven
to 350°F/180°C/gas 4. Butter three cookie sheets. Sift the flour, r baking soda, and salt into a
medium bowl.
Beat the butter and brown and
granulated sugars in a large bowl with an electric
mixer at high speed until creamy.
Add the eggs and
vanilla, beating until just blended. Mix in
the dry ingredients, oats, and sunflower seeds.
Drop tablespoons of the dough 2 inches (5 cm) apart
onto the prepared cookie sheets.
Bake, one batch
at a time, for 10-15 minutes, or until golden brown. Cool on the sheets until the cookies firm slightly.
Transfer to racks to finish cooling.
