Cereal and Seed Cookie Recipes - Sesame Snaps Recipe

Ingredients

  • 1 cup/250 g butter

  • 1 cup/200 g sugar

  • 1 tbsp finely grated lemon zest

  • 2 cups/300 g all-purpose/plain flour

  • 1 large egg white, lightly beaten

  • 2 tbsp honey

  • 1 1/3 cups/130 g sesame seeds


Method:

  1. Preheat the oven to 400°F/200°C/gas 6. Butter and flour two cookie sheets.

  2. Beat the butter, sugar, and lemon zest in a large bowl with an electric mixer at high speed until pale and creamy.

  3. With mixer at low speed, gradually beat in the flour. Place the egg white, honey, and sesame seeds in a small bowl and mix well. The mixture should be dense and dry.

  4. Scoop out 1 heaping tablespoon of dough and shape into a ball about the size of a walnut.

  5. Place over the sesame mixture and press down with your fingers until 3 inches (8 cm) in diameter.

  6. Repeat until all the dough and filling are used up. Place the cookies, sesame seed-side up, on the sheet.  Bake for 10-15 minutes, or until golden brown.
