Cereal and Seed Cookie Recipes - Polenta and Poppy Seed
Cookies Recipe
Ingredients

cups/200 g finely
ground yellow cornmeal

1 1/3 cups/200 g
all-purpose/plain flour

2 tsp baking powder

1/8 tsp salt

2/3
cup/140 g granulated sugar

2/3 cup/150 g butter, softened

3 large eggs, lightly beaten

2 tsp dry white wine
-
1
tbsp milk
-
1/3 cup/40 g poppy seeds
-
1/3 cup/50 g confectioners'/icing sugar
Method:

Sift the
cornmeal, flour, baking powder, and salt into a
large bowl. Stir in the sugar, butter, and 2
eggs.

Add the wine and mix to form a smooth dough.
Press the dough into a disk, wrap in plastic wrap,
and refrigerate for 30 minutes.

Preheat the
oven to 400°F/200°C/gas 6. Butter two cookie
sheets.

Roll out the dough on a lightly
floured surface to a thickness of 1/4 inch (5 mm).

Cut into 2-inch (5-cm) triangles and place 1 inch
(2.5 cm) apart on the prepared cookie sheets.

Beat
the remaining egg with the milk in a small bowl.
Brush over the cookies. Sprinkle with the poppy
seeds and confectioners' sugar.

Bake for 15-20
minutes, or until just golden. Transfer to racks
to cool.
