Cereal and Seed Cookie Recipes - Polenta and Poppy Seed Cookies Recipe

Ingredients

  • 1 1/3 cups/200 g finely ground yellow cornmeal

  • 1 1/3 cups/200 g all-purpose/plain flour

  • 2 tsp baking powder

  • 1/8 tsp salt

  • 2/3 cup/140 g granulated sugar

  • 2/3 cup/150 g butter, softened

  • 3 large eggs, lightly beaten

  • 2 tsp dry white wine

  • 1 tbsp milk

  • 1/3 cup/40 g poppy seeds

  • 1/3 cup/50 g confectioners'/icing sugar


Method:

  1. Sift the cornmeal, flour, baking powder, and salt into a large bowl. Stir in the sugar, butter, and 2 eggs.

  2. Add the wine and mix to form a smooth dough. Press the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

  3. Preheat the oven to 400°F/200°C/gas 6. Butter two cookie sheets.

  4. Roll out the dough on a lightly floured surface to a thickness of 1/4 inch (5 mm).  

  5. Cut into 2-inch (5-cm) triangles and place 1 inch (2.5 cm) apart on the prepared cookie sheets.

  6. Beat the remaining egg with the milk in a small bowl. Brush over the cookies. Sprinkle with the poppy seeds and confectioners' sugar.

  7. Bake for 15-20 minutes, or until just golden. Transfer to racks to cool.
