Cereal and Seed Cookie Recipes - Peanut Munchies Recipe
Ingredients
1 cup/150
g all-purpose/plain flour
1/2 tsp
baking powder
1/2
tsp baking soda
1/2 cup/125 g butter,
softened
1 cup/200 g granulated
sugar
1 large egg, lightly beaten
1/2 cup/50 g
salted peanuts
1 cup/150 g
corn flakes
2 1/4
cups/330 g old-fashioned rolled
oats
Method:
Preheat the oven
to 300°F/150°C/gas 2. Butter a cookie sheet.
Sift the flour, baking powder, and baking soda into
a medium bowl. Beat the butter and sugar in a
large bowl with an electric mixer at high speed
until creamy.
Add the egg,
beating until just blended. Mix in the dry ingredients, peanuts,
corn flakes, and oats to make a stiff dough.
Drop
teaspoons of the dough 1 inch (2.5 cm) apart onto
the prepared cookie sheet.
Bake for 10-15
minutes, or until lightly browned. Cool on the sheet until
the cookies firm slightly. Transfer to racks and
let cool completely.
