Cereal and Seed Cookie Recipes - Open Sesame Cookies Recipe

Ingredients

  • 1/3 cup/60 g golden raisins

  • 1/2 cup/125 ml brandy

  • 1 cup/150 g all-purpose/plain flour

  • 1 cup/150 g cornstarch/corn flour

  • 2/3 cup/140 g granulated sugar

  • 1 tsp baking powder

  • 1/4 tsp ground cinnamon

  • 1/8 tsp salt

  • 2 tbsp extra-virgin olive oil

  • 2/3 cup/150 g butter, softened

  • 1 1/4 cups/125 g sesame seeds, toasted

  • 1 1/4 cup/125 ml water or more as needed


Method:

  1. Pump the raisins in the brandy in a small bowl for 15 minutes. Drain and pat dry with paper towels.

  2. Mix the flour, cornstarch, sugar, baking powder, cinnamon, and salt in a large bowl.

  3. Stir in the oil, butter, sesame seeds, and raisins. Add enough water to form a smooth dough.

  4. Form the dough into a log 1 inch (2.5 cm) in diameter, wrap in plastic wrap, and refrigerate for at least 30 minutes.

  5. Preheat the oven to 350°F/180°C/gas 4. Butter two cookie sheets. Slice the dough 1/2 inch (1 cm) thick and place 1 inch (2.5 cm) apart on the prepared cookie sheets.

  6. Bake for 15-20 minutes, or until golden. Transfer to racks and let cool completely.
