Cereal and Seed Cookie Recipes - Oat and Seed Bars Recipe

Ingredients

  • 6 tbsp butter, softened

  • 6 tbsp honey

  • 1/2 cup/100 g raw sugar (Demerara or Barbados)

  • 1 1/2 cup/225 g old-fashioned rolled oats

  • 1/2 cup/50 g coarsely chopped walnuts

  • 1/2 cup/90 g raisins

  • 2 tbsp pumpkin seeds

  • 2 tbsp sunflower seeds

  • 2 tbsp sesame seeds

  • 2 tbsp shredded/desiccated coconut

  • 3/4 tsp ground cinnamon

  • 1/8 tsp salt


Method:

  1. Preheat the oven to 375°F/190°C/gas 5. Butter an 11 x 7-inch (28 x 18-cm) baking pan.

  2. Melt the butter with the honey and raw sugar in a large saucepan over low heat, stirring constantly.

  3. Bring to a boil and cook until the sugar has dissolved completely.

  4. Stir in the oats, walnuts, raisins, pumpkin seeds, sunflower seeds, sesame seeds, coconut, cinnamon, and salt.

  5. Spoon the mixture evenly into the prepared pan. Bake for 30-35 minutes, or until just golden. Cool completely before cutting into bars.
