Cereal and Seed Cookie Recipes - Oat and Chocolate Chip Cookies Recipe

Ingredients

  • 2 1/4 cups/330 g old-fashioned rolled oats

  • 1 cup/200 g firmly packed light brown sugar

  • 1/2 cup/100 g granulated sugar

  • 2 tbsp all-purpose/plain flour

  • 1/4 tsp salt

  • 1 1/3 cups/330 g butter, melted

  • 1 large egg

  • 1 tsp vanilla extract/essence

  • 1/2 cup/90 g semisweet/dark chocolate chips


Method:

  1. Preheat the oven to 350°F/180°C/gas 5. Set  out two cookie sheets.  

  2. Stir together the oats, brown and granulated sugars, flour, and salt in a  large bowl.

  3. Make a well in the center and stir in the butter, egg, and vanilla. Stir in the chocolate chips.

  4. Drop teaspoons of the dough 3 inches (8 cm) apart onto the cookie sheets.

  5. Bake for 5-8 minutes, or until lightly browned and the centers are bubbling. Transfer to racks and let cool completely.
