Cereal and Seed Cookie Recipes - Italian Rice Cookies Recipe

Ingredients

  • 1 2/3 cups/250 g rice flour

  • 1/2 tsp baking powder

  • 1/8 tsp baking soda

  • 1/8 tsp salt

  • 1/3 cup/70 g granulated sugar

  • 4 tbsp best-quality extra-virgin olive oil

  • 1/3-2/3 cup/80-150 ml water


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter two cookie sheets. Sift the flour, baking powder, baking soda, and salt into a large bowl.

  2. Stir in the sugar. Mix in the olive oil and enough water to form a stiff dough.

  3. Form the dough into balls the size of walnuts and place 1 inch (2.5 cm) apart on the prepared cookie sheets, flattening them slightly.

  4. Bake for 20-25 minutes, or until just golden. Transfer to racks and let cool completely.
