Cookies Recipe
Ingredients
1 cup/150 g all-purpose/plain flour
1 tsp baking powder
1/8 tsp salt
1/2
cup/125 g butter, softened
1/3 cup/70 g granulated sugar
1 large
egg
1 cup/150 g bran flakes or sticks
1 cup/150 g whole-wheat flour
Method:
Sift the
all-purpose flour, baking powder, and slat into a
large bowl. Beat the butter and sugar in a large
bowl with an electric mixer at high speed until
creamy.
Add the egg, beating until just blended. Mix in the dry ingredients, followed by the bran
flakes and whole-wheat flour.
Preheat the oven to
350°F/180°C/gas 4. Set out two cookie sheets. Press the dough into a disk, wrap in plastic wrap,
and refrigerate for 30 minutes.
Roll out the dough
on a lightly floured surface. Use a 2-inch (5-cm)
cookie cutter to cut out the cookies.
Gather the
dough scraps, re-roll, and continue cutting out
cookies until all the dough is used.
Use a spatula
to transfer the cookies to the cookie sheets,
placing them 1 inch (2.5 cm) apart.
Bake for 12-15
minutes, or until lightly browned. Transfer to
racks to cool.
