Cereal and Seed Cookie Recipes - Geordie Cookies Recipe

Ingredients

  • 1 1/4 cups/180 g all-purpose/plain flour

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup/125 g butter, softened

  • 1/2 cup/100 g granulated sugar

  • 1/2 cup/100 g firmly packed dark brown sugar

  • 1/2 tsp vanilla extract/essence

  • 1 large egg, lightly beaten

  • 1/3 cup/50 g old-fashioned rolled oats

  • 1/2 cup/90 g raisins

  • 2/3 cup/60 g coarsely chopped walnuts


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter three cookie sheets. Sift the flour, baking soda, and salt into a large bowl.

  2. Beat the butter and granulated and brown sugars in a large bowl with an electric mixer at high speed until creamy.

  3. Add the vanilla and egg, beating until just blended. Mix in the dry ingredients, oats, raisins, and peanuts.

  4. Drop heaping teaspoons of the dough 2 inches (5 cm) apart onto the prepared cookie sheets.

  5. Bake, one sheet at a time, for 12-15 minutes, or until lightly browned.  Transfer to racks and let cool completely.
