Cereal and Seed Cookie Recipes - Easy Aniseed Cookies Recipe

Ingredients

  • 2 cups/300 g all­purpose/plain flour

  • 1 cup/200 g granulated sugar

  • 1/8 tsp salt

  • 4 tbsp extra-virgin olive oil

  • 4 tbsp Muscatel wine

  • 2 tbsp anisette

  • 1 tbsp aniseeds

  • 1 large egg, lightly beaten

  • 1 tbsp vanilla sugar


Method:

  1. Stir together the flour, sugar, and salt in a large bowl. Gradually mix in the oil and wine.

  2. Add the anisette and aniseeds and knead until smooth. Refrigerate for 30 minutes.

  3. Preheat the oven to  350°F/180°C/gas 4. Butter and flour a cookie sheet.

  4. Roll out the dough to a thickness of 1/8 inch (3 mm). Use a 2-inch (5-cm) cookie cutter to cut out the cookies. Continue cutting out cookies until all the dough is used.

  5. Transfer the cookies to the prepared cookie sheet. Prick all over with a fork.

  6. Brush the cookies with the beaten egg and sprinkle with the vanilla sugar. Bake for 12-15 minutes, or until just golden.  Transfer to racks and let cool.
