Cereal and Seed Cookie Recipes - Digestive Biscuits Recipe

Ingredients

  • 1 cup/150 g whole-wheat flour

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 3/4 cup/180 g butter, cut up

  • 1 cup/150 g oat bran

  • 1/2 cup/100 g granulated sugar

  • 1 large egg, lightly beaten


Method:

  1. Sift the whole-wheat flour, baking soda, and salt into a large bowl. Cut in the butter until the mixture resembles fine crumbs.

  2. Stir in the oat bran and sugar. Mix in enough beaten egg. Press the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

  3. Preheat the oven to 375°F/190°C/gas 5. Butter a cookie sheet. Roll out the dough on a surface lightly dusted with oat bran to a thickness of 1/4 inch (5 mm).

  4. Use a 2-inch (5-cm) cookie cutter to cut out the cookies. Gather the dough scraps, re-roll, and continue cutting out cookies until all the dough is used.

  5. Transfer the cookies to the prepared cookie sheet, placing them 1 inch (2.5 cm) apart.

  6. Bake for 10-15 minutes, or until browned.  Transfer to racks and let cool.
