Cereal and Seed Cookie Recipes - Date and Corn Flake Cookies Recipe

Ingredients

  • 1 cup/150 g all-purpose/plain flour

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup/125 g vegetable shortening

  • 1/2 cup/100 g firmly packed light brown sugar

  • 1/2 cup/100 g granulated sugar

  • 2 large eggs

  • 1 cup/150 g old-fashioned rolled oats

  • 1/2 cup/50 g corn flakes

  • 1/2 cup/50 g finely chopped dates

  • 1/2 cup/90 g semisweet/dark chocolate chips


Method:

  1. Sift the flour, baking soda, and salt into a large bowl. Beat the shortening and brown and granulated sugars in a large bowl with an electric mixer at high speed until creamy.

  2. Add the eggs, beating until just blended. Mix in the dry ingredients, oats, corn flakes, dates, and chocolate chips to form a stiff dough.

  3. Divide the dough in half. Form into two 8-inch (20-cm) logs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

  4. Preheat the oven to 375°F/190°C/gas 5. Butter two cookie sheets.

  5. Slice the dough 1/4 inch (5 mm) thick and place 2 inches (5 cm) apart on the prepared cookie sheets.

  6. Bake for 10-12 minutes, or until lightly golden. Cool on the sheets until the cookies firm slightly. Transfer to racks to cool completely.
