Cereal and Seed Cookie Recipes - Citrus Corn Flake Cookies Recipe

Ingredients

  • 1 1/2 cups/225 g all-purpose/plain flour

  • 1 tsp baking powder

  • 1/8 tsp salt

  • 1/2 cup/125 g butter, softened

  • 3/4 cup/150 g granulated sugar

  • 1 large egg

  • 2 cups/300 g cornflakes, lightly crushed

  • 2 tsp grated lemon zest


Method:

  1. Sift the flour, baking powder, and salt into a medium bowl. Beat the butter and sugar in a large bowl with an electric mixer at high speed until creamy.

  2. Add the egg, beating until just blended. Stir in the cornflakes and lemon zest Mix in the dry ingredients to form a stiff dough.

  3. Form the dough into a 12 x 2-inch (30 x 5-cm) log, wrap in plastic wrap, and refrigerate for at least 30 minutes.

  4. Preheat the oven to 425°F/220°C/gas 7. Butter three cookie sheets. Slice the dough 1/4 inch (5 mm) thick and place 1 inch (2.5 cm) apart on the prepared cookie sheets.

  5. Bake, one sheet at a time, for 8-10 minutes, or until just golden. Transfer to racks and let cool completely.
