Cereal and Seed Cookie Recipes - Breakfast Cookies Recipe
Ingredients

2/3 cup/100 g
all-purpose/plain flour

1 tsp
baking powder
-
6 tbsp
butter, softened
-
2/3
cup/140 g firmly
packed light brown
sugar

2 large
eggs
-
2 tbsp corn
flakes
-
1/2 cupj50 g finely
chopped
dried apricots
-
3 tbsp shredded/desiccated coconut
Method:

Preheat the oven
to 350°F/180°C/gas 4.
Line two cookie sheets with parchment paper.

Sift the flour and baking
powder into a large bowl. Beat the butter and brown
sugar in a large bowl with an electric mixer at high
speed until creamy.

Add the eggs, beating until
just blended. Mix in the dry ingredients, followed
by the corn flakes, apricot and coconut.

Drop heaping teaspoons of the
mixture 1 1/2 inches (4 cm) apart onto the prepared
cookie sheets.

Bake for 10-12 minutes, or
until lightly browned. Transfer the cookies on the
parchment paper to racks to cool.
