Butter Cookie Recipes - Yellow Cookies Recipe

Ingredients

  • 2 cups/300 g finely ground yellow cornmeal

  • 1 cup/150 g all-purpose/plain flour

  • 1 cup/150 g confectioners'/Icing sugar

  • 1 tsp baking powder

  • 1/8 tsp salt

  • 1 large egg + 1 egg yolk

  • 2/3 cup/150 g butter, cut up

  • 4 tbsp lard or vegetable shortening

  • grated zest of 1 lemon


Method:

  1. Preheat the oven to 375°F/190°C/gas 5. Butter two cookie sheets.

  2. Sift the cornmeal, flour, confectioners' sugar, baking powder, and salt onto a work surface and make a well in the center.

  3. Add the egg and egg yolk, butter, lard, and lemon zest. Use your hands to knead the mixture into a smooth dough.

  4. Roll out the dough on a lightly floured surface to a thickness of 1/8 inch (3 mm). Use a 2-inch (5-cm) fluted cookie cutter to cut out the cookies.

  5. Gather the dough scraps, re-roll, and continue cuffing out cookies until all the dough is used. Use a spatula to transfer the cookies to the prepared cookie sheets.

  6. Bake for 12-15 minutes, or until just golden. Transfer to racks and let cool completely.
