Butter Cookie Recipes - Walnut Shortbread Recipe

Ingredients

  • 2 cups/300 g all purpose/plain flour

  • 1/8 tsp salt

  • 1 cup/250 g butter, softened

  • 1 cup/200 g firmly packed dark brown sugar

  • 1 large egg yolk

  • 1/2 cup/50 g candied cherries, cut in half

  • 1/2 cup/50 g finely chopped walnuts


Method:

  1. Sift the flour and salt into a medium bowl. Beat the butter and brown sugar in a large bowl with an electric mixer at high speed until creamy.

  2. Add the egg yolk, beating until just blended. Mix in the dry ingredients, cherries, and walnuts to form a smooth dough.

  3. Divide the dough in half. Form into two 4-inch (10-cm) logs, wrap each in plastic wrap, and refrigerate for 30 minutes.

  4. Preheat the oven to 375°F/190°C/ gas 5. Butter two cookie sheets.

  5. Slice the dough 1/4 inch (5 mm) thick and place 1 inch (2.5 cm) apart on the prepared cookie sheets.

  6. Bake for 10-12 minutes, or until just golden at the edges. Transfer to racks to cool.
