Butter Cookie Recipes - Sicilian Crisps Recipe

Ingredients

  • 1 cup/150 g all purpose/plain flour

  • 1 cup/150 g finely ground cornmeal

  • 1/8 tsp salt

  • 2/3 cup/150 g butter, cut up

  • 3/4 cup/150 g granulated sugar

  • 3 large egg yolks, lightly beaten

  • 1 tbsp Marsala

  • Grated zest of 1 orange


Method:

  1. Sift the flour, cornmeal and salt into a large bowl. Use a pastry blender to cut in the butter until the mixture resembles tine crumbs.

  2. Stir in the sugar, egg yolks, Marsala, and orange zest to form a stiff dough.

  3. Press the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

  4. Preheat the oven to 350°F/180°C/gas 4. Butter two cookie sheets. Roll out the dough on a lightly floured surface to a thickness of 1/4 inch (5 mm).

  5. Use a fluted 2-inch (5-cm) cookie cutter to cut out the cookies.

  6. Gather the dough scraps, re-roll, and continue cutting out cookies until all the dough is used.

  7. Use a spatula to transfer the cookies to the prepared cookie sheets, placing them 1 inch (2.5 cm) apart.

  8. Bake for 15-20 minutes, or until just golden. Transfer to racks to cool.
