Butter Cookie Recipes - Piped Vanilla Cookies Recipe

Ingredients

  • 1 cup/250 g butter, softened

  • 1/2 cup/100 g + 2 tbsp granulated sugar

  • 1 1/2 tsp vanilla extract/essence

  • 1 large egg

  • 2 cups/300 g all purpose/plain flour

  • 1/8 tsp salt


Method:

  1. Preheat the oven to 375°F/190°C/gas 5. Set out four cookie sheets.

  2. Beat the butter and 1/2 cup (100 g) sugar in a large bowl with an electric mixer at high speed until creamy.

  3. Add the vanilla and egg, beating until just blended. Mix in the flour and salt to form a soft dough.

  4. Insert the chosen design plate into the press by sliding it into the head and locking it in place.

  5. Press out the cookies, spacing 1 inch (2.5 cm) apart on the cookie sheets. Sprinkle with the remaining sugar.

  6. Bake, one sheet at a time, for 5-8 minutes, or until just golden at the edges. Transfer to racks and let cool completely.
