Butter Cookie Recipes - Neverland Shortbread Recipe

Ingredients

  • 3/4 cup/75 g finely chopped pine nuts

  • 2 tbsp granulated sugar

  • 1 cup/250 g butter, softened

  • 3 1/2 cups/200 g confectioners'/Icing sugar

  • 1 1/3 cups/400 g all-purpose/plain flour

  • 1/8 tsp salt


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter and flour two cookie sheets.

  2. Stir together the pine nuts and granulated sugar in a small bowl.

  3. Beat the butter and confectioners' sugar in a large bowl with an electric mixer at high speed until creamy.

  4. With mixer at low speed, gradually beat in the flour and salt. Scoop out a heaping tablespoon of dough and shape into a ball the size of a walnut.

  5. Place the cookies on the prepared cookie sheets, spacing them 1 inch (2.5 cm) apart.

  6. Sprinkle with the pine nut mixture. Bake for 15-20 minutes, or until golden brown. Cool the cookies completely on the cookie sheets.
