Use a wooden
spoon to mix the flour, egg yolks, butter, sugar,
and salt in a large bowl to form a smooth dough.
Press the dough into a disk, wrapin
plastic wrap, and refrigerate for 30 minutes.
Preheat the oven to 350°F/180°C/gas 4. Butter two
cookie sheets. Form the dough into 1-inch (2.5-cm)
long logs and place 1 inch (2.5 cm) apart on the
prepared cookie sheets.
Shape the logs into
S-shapes. Bake for 8-10 minutes, or until just
golden.
Lemon Glaze: Put the confectioners' sugar
in a medium bowl. Beat in 4 tablespoons lemon juice
and zest until smooth.
Adding the additional
tablespoon of lemon juice as needed to make a good
spreading consistency. Drizzle the glaze over the
cookies.
