Butter Cookie Recipes - Lemon-Glazed S-Shapes Recipe

Ingredients

  • 1 2/3 cups/400 g all purpose/plain flour

  • 3 large egg yolks

  • 1/2 cup/125 g butter, softened

  • 2/3 cup/140 g granulated sugar

  • 1/8 tsp salt 

LEMON GLAZE:

  • 1 cup/150 g confectioners'/icing sugar

  • 4-5 tbsp fresh lemon juice

  • 1 1/2 tsp finely grated lemon zest


Method:

  1. Use a wooden spoon to mix the flour, egg yolks, butter, sugar, and salt in a large bowl to form a smooth dough.

  2. Press the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

  3. Preheat the oven to 350°F/180°C/gas 4. Butter two cookie sheets. Form the dough into 1-inch (2.5-cm) long logs and place 1 inch (2.5 cm) apart on the prepared cookie sheets.

  4. Shape the logs into S-shapes. Bake for 8-10 minutes, or until just golden.

  5. Lemon Glaze: Put the confectioners' sugar in a medium bowl. Beat in 4 tablespoons lemon juice and zest until smooth.

  6. Adding the additional tablespoon of lemon juice as needed to make a good spreading consistency. Drizzle the glaze over the cookies.
