Butter Cookie Recipes - Lemon Bars Recipe

Ingredients

  • 1 1/4 cups/180 g all-purpose/plain flour

  • 1/8 tsp salt

  • 1/4 cup/50 g firmly packed light brown sugar

  • 1/2 cup/125 g cold butter, cut up

  • 2 tsp finely grated lemon zest

  • 1/4 tsp lemon extract


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter two cookie sheets. Sift the flour and salt into a large bowl.

  2. Stir in the brown sugar. Use a pastry blender to cut in the butter until the mixture resembles fine crumbs.

  3. Turn out onto a lightly floured surface, add the lemon zest and extract, and knead into a smooth dough.

  4. Roll out  the dough to a 1/4-inch (5-mm) thick rectangle. Use a sharp knife to cut the dough into three 3/4 x 1-inch (2 x 2.5-cm) bars.

  5. Transfer the bars to the prepared cookie sheets, spacing them 1/2 inch (1 cm) apart. Prick all over with a fork.

  6. Bake for 15-20 minutes, or until golden. Cool the shortbread completely on the cookie sheets.
